This weeks giveaway...BEAUTIFUL

Cafe Rio Pork Salad

I know this is old school, but there are about a million recipes out there for Cafe Rio Pork Salad, don't you think? And the honest truth is, some are just plain terrible! I have found this recipe to be my favorite! I am HOPING this will be the beginning of lots of yummy recipes I can share. I have found some good ones!

First, you have to make the LIME-CILANTRO RICE
2 T oil
4 C long grain rice (6 c. water)
1 bunch finely chopped cilantro
juice of 2 limes
2 t crushed garlic
Heat oil in a large skillet. Add rice, cilantro, and garlic. Saute 3-5 minutes, stirring frequently. Add water and lime juice and bring to boil. Then reduce heat and simmer until all the liquid is absorbed by the rice (about 20 minutes). You can also use a rice cooker if you have one.  I use the rice cooker, just throw it all in there and it is great!

Now for the pork...
1 (16 oz.) bottle of salsa  I like to use Pace Picante.  I don't know why, this is the only time I ever even eat it!
1 can coke
2 c. brown sugar
Place pork in crock-pot and fill it half way up with water. Cook roast on high for 5 hours. Drain off water. Cut pork in thirds. Mix together ingredients (salsa, coke, brown sugar) and put on top of pork. Cook an additional 3 hours on high. Shred pork with forks. Leave it on low until ready to serve.
**TIP: For some reason, Pork stinks when it is first cooking (in my opinion anyway).  I just plug this little crock pot into my garage and voila!  NO MORE STINKY!  :)

I don't have a recipe for the dressing I can swear by.  I just go to Cafe Rio and buy the dressing from them. You can get it in bulk.  If anyone has one they like, share it with us!  I just have always been to lazy.

You can get the tortilla strips in the Produce department in your grocery store and I suggest you buy the uncooked tortilla shells to use as well.  You also will want to make or get guacamole and a bunch of cilantro and lettuce of course to complete the salad!

They are sooo yummy.  For the dish, I have either bought them empty from Cafe Rio or used disposable pie tins.  My kids love it!

Friday, November 19 4pm - Saturday, November 20 5pm
Where: Best Western Cottontree Inn Sandy, UT
4 in a room...cost is $40.00 per person
3 in a room...cost is $48.00 per person
2 in a room...cost is $65.00 per person
1 in a room... Cost is $129.00
Each room has 2 queen size beds.
If you are planning to come I would suggest that you sign up as soon as possible. There are many who want to come and the space is VERY limited. We have less space than usual this time! You can click here to pay your non refundable deposit. The balance will be due at the retreat.

We will have breakfast at the hotel and I will provide lunch. There will be a few prizes, door prizes for everyone and designers to come and visit.

We have listed the classes below. You CAN have a kit mailed to you, it will be mailed no later than the retreat date. If the classes sell out, those who are signed up for the retreat will get priority over those who are just coming to a class. Due to space, we cannot have croppers for just one day or the other, you do have to be there overnight. We have a required number of rooms we have to fill.

Beginner Digital Scrapbooking

Let's jump into the world of Digital Scrapbooking using Photoshop Elements 8.  We'll explore topics such as software choice, types of scrapbooking, digital scrapbook vocabulary & terminology, digital scrapbook etiquette, printing options and benefits of digital scrapbooking.  We will walk through creating a scrapbook page using a QuickPage as well as using Templates.  You will also walk out of the class with digital products totaling more than $30 and a list of tutorials to walk you through digital scrapbooking step-by-step!  Please join us for a new and exciting scrapbook adventure!

You've attended the Beginning Digital Scrapbooking class.  You've turned on your computer and now what?!  If you're apprehensive of trying this alone or just want to hang out with the "cool" scrapbookers, sign up for our Study Hall.  All the digital scrapbookers will be sitting together in the crop room for three hours of hands-on help.  We will get you set up & working on your first digital scrapbook layout in no time!  We will even upload & print the layout and have it delivered to the retreat before you leave Saturday night!  We will be making some cute hybrid scrapbook projects, too!  We'll be giving away some digital scrapbook products, too!  Surge protectors & extension cords provided.  (Please have Adobe Photoshop Elements 8 installed on your computer prior to the beginning of Study Hall.  You can download a trial version of the software here. If you download and install the trial, please do not do so BEFORE Thursday November 18th, as the trial period only lasts 30 days and we want to have ample time to try digital scrapbooking AFTER our class!)

Welcome Kasey Hansen...our next guest designer!

I have been scrapbooking for several years now and love being able to preserve memories in a creative way.  I have two children ages 6 and 2.  Between chasing my 2 year old around and shuttling my 6 year old around to her various activities, I don’t find a lot of time to spend on scrapbooking.  This is why I love A Page 4 All Seasons kits.  It makes “creating” so much more easy.  Gone are the days of sitting at my craft table, staring at photos and supplies, trying to come up with a fresh and new layout.   I love that the kits usually come with more supplies than needed.  It allows you to change things up to fit your needs.  I love being a member of the autoship club.  I look forward to seeing what the next month layouts will be.

This weeks giveaway...lost and found!

I don't think a product gets any more gorgeous than this! We are now in the process of adding ALL of the new My Minds Eye lines to our site. We Love to fly with FotoFly!

Check it out!!! We got our pictures taken at this BRAND NEW studio in Draper Peaks (Draper, UTAH) and they did an amazing job! They have a "magical" way of capturing moments and faces yet taking pictures in an atmosphere where they turn out so professional! Their studio was like nothing I have ever seen before. And, get this! It is only $75 to do a 1 hour sitting! Then, you get a CD of pictures for that cost, and you can post them anywhere, print them anywhere, do whatever you want with them! Locker Decorations with Style!

LOCKER MOBILE:
Supplies Needed:
Chandelier Locker light (Target)
32488 Making Memories Slice Tagmaker Rims Blue Glitter
Assorted Ribbons from American Crafts Spring and Summer Line
Silver Brads
Making Memories Paper clips or any binder clips

You can get these darling Chandeliers with a light attached to them at Target.  They are only about $4.99.  They have a magnet on top so you can stick it to the top of your locker.  The original chandelier had black rings coming down from it.  I clipped those all off so I just had the ring to work with, and make my own "personal" look!  To do this,
Cut the ribbon to about 1 inch longer than you would like it to hang.
Wrap the ribbon around the ring at the top of the chandelier and fasten with the brad.

Print pictures of your friends and family you would like hung and cut them place them into the tagmaker tags.  I found these darling glitter blue ones.  I thought they were super fun!
Clip to the chandelier ribbon with the paper clips or binder clips.  I tied some ribbon through the whole in the clip to add some "crafty" flare to it!

See!  Easy Peasy!  Make your kids do it to occupy them while they are excited to go back this week!  They can hang pictures of their friends from this...

**It would be fun to make this in “bigger” form and put it in your room! You would just use a ring from the crafts store. Embroidery hoops work great!

LOCKER DECOR


This layout was inspired by a page layout our designer Amber Packer had done for her autoship club last month! Here is the layout...
I simply turned the layout sideways and started to look at it like it was a locker door!  Here is what you should do...
Cut your paper to be the width of your locker. I would take the paper to your school and try it in the locker first because the lock could be in the way.  Once you have outlined where and how big it should be, you can bring the background paper back home and complete the layout.
Here are the dimensions I used for my locker layout..
Echo Park Paper Pinwheels paper SS1012 9” wide for the base of the layout
Whimsey Stripe SS1007 (Red paper) (2) 1/2”x12” strip for the left side going all the way down
Citrus Circle SS1008 (green plaid) (1) 5”x5” square for the top page and (1) 5”x12” strip for the bottom page.
Citrus Circle SS1008 (circle side) 4.5”x7” for the top page.
For the bottom of the page:
Citrus Circle SS1008 (circle side) 1”x7” strip
Whimsey Stripe SS1007 (Red Paper) 1.25”x7” strip
Cool Treats SS1004 (Stripe Paper) .25”x6”
Flower Garden SS1011 (Orange) 1.5”x6” strip and use the EK Success scallop edge punch or free hand cut it to be scalloped.

I added the last page with a heart and photo frame with my leftovers.  Now, you wonder why there is no picture?  It is because I was thinking that they could put the picture of whoever they have a crush on in that photo matte along with their name in the magnetic letters (notice I make it all very temporary for this part of the layout)

Adhere magnets to the back of these letters so you can change them to be whatever you would like them to say! Friends can leave you messages!
